This recipe contains low fodmap foods from the whole 30 low fodmap menu. FODMAPs are short chain carbohydrates: oligosaccharides, disaccharides, monosaccharides and related alcohols that are poorly absorbed in the small intestine. Fodmaps cause gut issues for some people. Also needed is a handful of fresh chopped spinach and the ghee, pictured below.

Use the ghee to sauté the vegetables and sausage. Ghee is made from clarified butter so it adds lovely flavor to the dish. It does not contain lactose.

Sautee the sausage and vegies in one tablespoon of ghee for a few minutes until the sausage and peppers are slightly browned.

Use a large pan so it's about as thick as a pizza.

 

Breakfast Crumble

Eggs – 6
Sausage – 1 lb.
Spinach – 1 large handful
Yellow Pepper –  1
Red Tomato – 1
Ghee, organic – 1 tbsp.

How to Prepare

Gather
Chop
Saute all but tomatoes
Add to large baking sheet
Pour scrambled eggs over
Add chopped tomatoes

How to Cook

Bake 35 minutes at 375
In a large heavy cookie sheet 

Breakfast for the Week

Cut into squares
Save in a glass tupperware
Refrigerate
Take out a slice
Heat in the microwave 35 seconds
Enjoy!
